Lately I've been making a lot of salads. They're packed full of nutrients (all depending on what you put into them, of course), they're filling, and they're so easy to prepare. While they are filling, they do not leave you feeling too full. Salads are a great light meal! Especially if you're getting all dressed and going out in the evening. Which is exactly what I am doing tonight - it's Adam's 26th birthday dinner. We're wining and dining at his cousin's restaurant with all of his close friends. It's going to be a great night. He deserves it! :)
Here's what I had for lunch, so that I fit into my dress:
Bowl full of Spinach
1/4 cup Red Grapes
1/2 cup Cottage Cheese
1 tablespoon Walnuts
1 tablespoon Sugar-Free Maple Syrup
Put your spinach in a bowl. Halve the grapes and place them on top, and toss. Add the cottage cheese, sprinkle the walnuts, and drizzle the maple-syrup.
And that's it! You're done!
So, whether you are short for time, lacking in nutrients, or wanting to fit into your little black dress, salads will always have your back! ;)
