I'm keeping this one short, as I should be studying, but I wanted to share my second take on "breakfast for dinner" oatmeal. This one also has a sweet component to it, which made for a delicious balance.
Savoury Fig Oatmeal:
1/2 cup uncooked Oats
1 cup Water
4 dried Figs
1/4 cup chopped Onion
1 tablespoon Walnuts
14g Goat Cheese (about a tablespoon)
Salt and Pepper to taste
In a microwave safe bowl, combine oats, chopped figs and water and put in the microwave for 1 minute. Remove and stir. Put back in for another 10-20 seconds.
Meanwhile, fry up the onions until brown. Then add the walnuts to lightly toast.
Stir in the oatmeal, and sprinkle with salt and pepper. Add the goat cheese and gently fold it together.
Put in bowl, drizzle with a little honey and enjoy!

This is a nice, comforting, quick meal when you have a long night of studying ahead of you (i.e. me)! But at least this is my last day of studying (woo!) - with exception of some last minute studying in the morning. And by this time tomorrow, I'll be done!! I'll be free to finally enjoy the holidays with my man, my friends and my family! I cannot wait! However, I've got to do a little (and by little i mean all of it) shopping, but it's all in my head, just need to go out and do the purchasing. The fun part. But I'm still looking forward to it! If I can handle the stresses of university, I can handle a little mall madness. Bring it on!
