Tout fini! All Done! Albeit a little sore from yesterday's exam (my hand, that is, from constant writing), I'm finally free to enjoy the holidays. But it really doesn't feel like I'm done. I only had to write one exam. Yep, don't hate me, just one. I didn't get off that easy though - I had a straight week and a half to stress over it as my exam fell on the second last day of the exam period. Talk about torture! So that's why I don't feel done, don't I have more to write? Nope! It's 3 days till Christmas, school is out. Ahhhh, feels good!
Anyway, enough about school. This morning, I woke up early so I can bring some cookies into work today for my lovely beanies. What's a beanie? I work at a coffee shop called the Human Bean, and so we (coworkers and I) have aptly named ourselves "beanies". Original, hey? ;) Seriously, I work with the most beautiful people. And these cookies are a little, teensy, fail-in-comparison way to show how much I love them.
Marble Chocolate Gingerbread Cookies:
(adapted from Crunch and Chew)
1 tablespoon Ground Flaxseed
3 tablespoons Water
2 tablespoons Molasses
1/3 cup Canola Oil
1/2 cup Brown Sugar
1 cup Whole Wheat Flour
2 teaspoons Ground Cinnamon
1 teaspoon Ground Ginger
1/4 teaspoon Ground Nutmeg
1/2 teaspoon Baking Soda
1/3 cup Marble Chocolate Chips
Pinch salt
Preheat your oven to 350F
Mix together the ground flaxseed and the water in a small bowl. Allow to thinken.
In another bowl, combine oil, molasses, brown sugar and the flax and water mixture until all incorporated.
Add the flour, salt, ground cinnamon, ground ginger, ground nutmeg and baking soda (all the dry ingredients). Mix well to combine. Add the chocolate chips, and mix again.
Refrigerate dough for about 1 hour or until firm (or overnight).
Make balls with the dough and evenly space them on a cookie sheet (they flatten and expand quite a bit). Keep your hands wet when shaping the dough as it's a sticky process!
Bake for 8-10 minutes.
Makes about 16 cookies
