Here's a quick and healthy dinner - need to eat as healthfully as possible to prepare for tomorrow's New Years Eve festivities. Going to start working on some snacks tonight, which means I need to trek across the street to the grocery store to pick up a few items. Hope I don't screw up these goodies like I did with my Christmas cookies. I added double the amount of butter that was needed. Haha, they literally melted as soon as they entered the oven. Quite funny looking back on it, but I was not impressed at the time. Showed up empty handed at Adam's family's Christmas dinner :( Definitely won't make the same mistake next year. Well, I'll try not to!
Anyway, here's a wholesome rice bowl dinner:
3/4 cup Brown Rice (instant Uncle Bens)
1/3 cup Black Beans
1 cup Broccoli
5 Grape Tomatoes
1/2 cup Spinach
Half an Avocado
Salt and Pepper to taste
Boil 3/4 cups of water and brown rice. Cover and let simmer for about 5 minutes
In a non-stick pan, fry the broccoli until lightly crispy. Quarter the grape tomatoes and add to the pan. Add in the black beans and cook till heated.
When the rice is done, throw in the spinach (roughly chopped) into the pot just enough to wilt a little.
Combine the pan mixture with the pot mixture, salt and pepper it, and then put everything into a bowl.
Top with diced avocado, and dig in :)
Get all the nutrients you can get today, because you'll definitely need them to keep you partying all night tomorrow! ;)
