Boyfriend + New shoes + Starbucks = Wonderful day! Is it really Sunday? Because Sundays are usually not my favourite. I tend to be very unproductive on this particular day. So, I am determined to do more. Visiting a cafe, heading to a library, exploring an ethnic food market, or even just spending more time with my family are all ways I'd love to spend a Sunday afternoon. Anything to evolve this once lazy, uneventful day, into a more fulfilling, meaningful day. And today was an excellent start to this. Granted, I had great company, so it may be hard to top ;)
Oh, and I made delicious dinner to boot. Have a peak see!
Curried Vegetables and Quinoa:
(adapted from What Would Cathy Eat?)
1/4 Quinoa
1/4 cup White Onion
1/2 teaspoon chopped Garlic
6 Baby Carrots
1/3 cup Zucchini
2 cups Cauliflower
2 teaspoons Curry Powder
Salt
Pepper
Couple spoonfuls of low-fat Plain Yogurt (Soy or Regular)
In a pan, saute the onions, garlic and carrots (chopped into small pieces). Couple minutes later, cut the zucchini into half moons and add them to the pan along with the cauliflower. Continue to cook for about 5 minutes to allow everything to caramelize a little. Add the spices (curry, salt, pepper). Cook for another 2 minutes. Add 1/2 cup of water, lower the heat, cover and simmer for 15 minutes.
Meanwhile, bring half of a cup of water to a bowl with 1/4 cup of quinoa. Cover and Simmer for 15 minutes.
After 15 minutes, all should be done! If you find that there is still water left in the pan, cook uncovered on medium-high heat to crisp up the vegetables.
Combine quinoa and curried vegetables, and top with yogurt (soy to keep it vegan).
