Proud New Owner Of...

...a "dot-com" website!! No longer do you have to type .typepad in the address to access my blog. Just slightfoodcrush.com! One of the many wonderful Christmas gifts my boyfriend got me. Also to help with my blog, he got me a beautiful aqua-colored Canon camera. No more pictures taken with my flashless iPhone camera. I'm still a little rusty with all of it's functions and do-dads, but it takes great pictures!

And what better way to commemorate my new gadget then to include it's first photo on my blog with a recipe involving peanut butter! Makes perfect sense to me. So, here's a breakfast quinoa recipe with raisins and Peanut Butter & Co. peanut butter.

It's no secret that I'm addicted to pasta. What's not to love? It's quick! It's easy! It's delicious! But it packs a lot of carbs. It wouldn't be a stretch to say that I eat pasta for supper 7 days a week sometimes. Not only that, but I have oatmeal every morning for breakfast - even more carbs! Because of this massive carb overload, I often feel really heavy and fatigued. Now I'm no doctor, but by changing my diet a little, maybe my lethargy will become something of the past? It's worth a try.

So to start, this morning I had grated apple with walnuts, flax seed, shredded coconut, sugar-free maple syrup, and almond milk. It was actually really good! For lunch, I mixed cottage cheese, yogurt, dried cranberries, fresh blueberries and puffed kamut into a bowl. These two meals still had carbohydrates, but contained a whole lot more fibre (apple) and was a lot lighter (kamut) then pasta. 

Sleepy Head

Due to an uncomfortable feeling of light headedness and fatigue, I am only but sharing a recipe. No tales this evening. Sadly, I am also missing yet another soccer game because of my recurring dizziness. Hopefully this lovely four day weekend will remedy this unwelcomed lethargy. 

Nonetheless, this soba noodle dish I made for dinner was nothing short of amazing. Please do try it. I definitely plan on making it again!

A Dormant Love Affair

I did it! I finally made a mushroom burger! And it was well worth the wait! 

I have a funny relationship with mushrooms. When I was a little girl, I used to love mushrooms. I'd pick them off my pizza and save them for last. Heck, it didn't have to even be my slice. I'd reach my tiny little hands over to my mom's pizza and take hers, too. I even liked 'shrooms from a can. I was pretty picky as a child, but I liked canned mushrooms...interesting. Anyway, my addiction eventually became a hatred. I despised the fungi for years. Yes, I still picked them off my pizza, but for an entirely different reason. But suddenly, about a year ago, my admiration returned! I've slowly weaned myself back onto mushrooms. Before today, I've only cooked with the tiny, seemingly harmless, button variety. At last, I was ready to take it up a notch. And a big notch indeed - the Portobella! And it's not going to stop there! I can't wait to experiment with other types of mushrooms, especially since I'm attempting to go meatless for 30 days in the near future. They're so meaty and delicious that they make great meat impersonators. Those tricky little buggers. 

So, for dinner yesterday, I decided to make a meatlover's staple - a burger. But instead of a beef patty (yuck), I replaced it with a portobella mushroom cap. It was glorious.

And So It Begins...

Alrighty. I've decided, starting tomorrow, I'm going on a 30 day sugar cleanse. That's right. No refined sugar for 30 days. That is - no candy (good-bye precious peanut m&ms), no pastries (good-bye soft gooey cookies), no chocolate (good-bye chocolate covered almonds), and no (dare I say it??) ICE CREAM! The ice cream will most definitely be my toughest hurdle, but there are some sugar free varieties, right?! Not as indulgent, but it'll only be for 30 days. I can do it. I will, however, be making some exceptions. Dried fruit, yogurt, certain cereals, and items of the like will continue to be consumed as they are a staple in my diet. And maybe the odd cocktail? I mean, NO, stay strong!

So to commemorate tomorrow's month long crazy feat, I've prepared a naturally sweetened fruit bowl for lunch. I know it's pretty breakfast-y to have for lunch, but I'm absolutely obsessed with breakfast and so I have no problem with eating these kinds of things 3 meals a day.
