Anyone who knows me, knows I am obsessed with oatmeal. I'll eat it for breakfast, lunch, and dinner! But I always have "sweet" oatmeal - your traditional breakfast varieties. Up until today, that is! When I first saw this version of "savoury" oatmeal (recipe below), I was a little weary and even a little perturbed. "Why on earth would anyone want to transform the beauty that is oatmeal?", I thought. But hesitantly, I gave it try. And...
...OH EM GEE!!! It was so incredibly delicious! I am going to be making it again, and again, and again. Everything about it was perfect. The caramelized vegetables, the salty cheese, the comforting oatmeal - perfect! Now I'll save "sweet" oatmeal for the morn, and it's savoury counterpart for din! Please give it a try!
Savoury Oatmeal:
(adapted from The Gracious Pantry)
2/3 uncooked Oats
1/3 cup White Onion
6 Button Mushrooms
3/4 cup Broccoli
1 tablespoon Parmesan Cheese
Salt and Pepper to taste
Cook your oats in the microwave with 1 1/4 water for about a minute. Stir. Put back into the microwave for another 20 seconds. (or just time it until you get a desired consistency, as timing varies between microwaves - this is what worked for me)
Meanwhile, brown the onion, mushrooms and broccoli. Feel free to add a little oil - I did not, and it turned out great.
Once vegetables are browned, fold in your cooked oatmeal just until everything is incorporated (begins to stick to the pan quite quickly). Sprinkle on the parmesan cheese until melted. Add salt and pepper.
Put into a bowl, add a little extra parmesan.
Enjoy with a nice hot cup of honey-ginger green tea - perfect on a cold, December evening.

Just one teeny thing to leave you with: Christmas Eve is exactly one week away! Anyone else as unprepared as I am? But even in this unpreparednesss state, I am still just as excited. Why? Because Christi will be home, and I am SOOO ready for her arrival!!
My mom had a bunch of cooked veggies left over from Christmas dinner and oatmeal is my all time favorite food. So... i made this and it was phenomenal! Best idea ever, i think of oatmeal in a whole new way.
